Manhattan NYC’s La Grande Boucherie Chef Maxime Kien Reveals His Inspiration

Manhattan NYC’s La Grande Boucherie Chef Maxime Kien Reveals inspiration from Past Generations of Chefs

Chef Maxime Kien is the new Executive Chef of NYC’s The Group, responsible for La Grande Boucherie, Boucherie Union Square, Boucherie West Village, Petite Boucherie and more.  And by the end of 2023, they’re launching even more restaurants throughout the United States..

But today’s conversation is about how the past has inspired Chef Maxime Kien’s work.

Chef Maxime Kien has over twenty years of fine dining experience but it all started as a young boy growing up in his family’s kitchens.

You grew up in kitchens.  Your grandparents loved to cook and your father was a chef.  How did these experiences inspire you?

Well, my Dad was a professional Chef in the South of France.  In Monaco, all my grandparents, both my grandmothers and my grandfathers were great cooks. One of my great-grandfathers was a professional cook in Paris at an open air market that was very famous in the early 1900s. There was a very famous French brasserie opened over there and the story behind that is that the gentleman that opened that place wanted to have a place where all the chefs [that worked there] could meet because there was the open air market that was right next to it.

So you had a mix of late night partiers that would go out and party and wanted a place to be able to go eat and drink all night long.  Now you had a place for that.

All the people that worked until late at night wanted a place where they could go and eat something before they went home. And Chefs that had to go to the market very early, at four o’clock in the morning to pick up that day’s poultry, rabbits, quails and all the fresh fish coming from Britain on a daily routine. They would do that at four o’clock in the morning and afterwards they needed a place to go for breakfast.

It was open 24 hours a day. It was always a mix of people from show business, like singers and actors.

You would have Mick Jagger sitting at the bar. Next to him would be a Chef.  Next to the Chef would be a 14 year old boy having an omelet for breakfast with a glass of red wine at six o’clock in the morning. So it’s always been a mix of everything.

Unfortunately, my Dad passed away when I was really young. I was six. But I guess I was drawn to cooking and that lifestyle.  It’s chaotic. When you’re working in a kitchen, you never know what time you’ll get done. It might be quiet and you get home at night by 10 o’clock.

If you start to get busy, you might not be done until two o’clock in the morning. So it’s a mix of adrenaline and being busy and it’s tough and it’s grueling and it’s rewarding and it’s a mix of everything

How did growing up in kitchens with your family inspire you to run your own kitchen?

Every chef is different. The way I run my kitchen is different from the way that other chefs I’ve worked with run theirs. It’s like a recipe. Everyone can interpret it differently.  You take bits and pieces from a recipe to take the same dish and make it your own.

Someone’s management style is the same way. I’ve worked for some chefs who were very good at managing people, but in the kitchen they were not as great. And some of them were geniuses at creating dishes, but they were not the best at managing people. So you have to create your own style.

You graduated culinary school when you were very young.  Would you still recommend school or encourage new chefs to learn hands-on in a kitchen?

The hard part about school versus hands-on is being able to understand exactly what [a new chef] is trying to achieve. Meaning that when I went to culinary school back in the 1980s, you wanted to graduate and get a diploma. After that, you wanted to be able to get your foot inside the door of a three Michelin star restaurant, a very famous place because you knew the chef was someone you were gonna be able to learn from.

And that [experience] was gonna take you to the next chef, that was gonna take you to the next chef, and so on.  Because it’s a close-knit community, like a family. All the big chefs know each other. So when you’re ready to make your next move, the Chef [at your current kitchen] would come and ask, ‘Where do you want to go next?’  He’ll make a call and help you get that next job.

Now, unfortunately, the way some TV cooking shows happen, they give a vision of what it is to be a chef that is completely different from the truth.

So now you have cooks that go to very famous, very expensive culinary schools and they spend a huge amount of money to graduate. Then after two years of education, they expect to find a position of Executive Chef, making six figures and wearing Egyptian cotton jackets with their name on them.

But they don’t have the basics.  They’re trying to run before they can walk. The biggest difference with my generation is, we went through all the processes, we didn’t try to rush the steps before you actually tried to be a chef.

You had to be a good line cook before you tried to become Chef de Partie and then [become] a good Chef de Partie before you become a Sous Chef, and then [become] a good Sous Chef, before you become an executive chef. So that’s the main difference.

Almost like an army style, you have to graduate through the ranks.

New chefs try to go too fast. Take your time. Find a chef you can learn from.  New York is very lucky for that because you’ve got so many great chefs.

Daniel Boulud and all these great chefs brought the New York Culinary to the next level.  Daniel Boulud has been here for 30 years now.

So go work for them, write everything down, taste everything, take pictures!

When I started, we didn’t have cell phones to take pictures, so it was whatever you could remember and whatever you could write down. Now we’ve reached a point where you can take a video of a chef doing a dish and afterwards you can write down notes.

I would say the biggest advice to the cooks right now: find a chef, find your niche, go work for him for two years, three years, four years. Write everything down, taste everything, ask questions, and then learn as much as you can.

Don’t think about being called “Chef” right away. Don’t think about making a ton of money. Learn as much as you can then, then after that, start to think about your next step.  But take your time.

If you have the financial ability to be able to afford culinary school, do it, but it can be pricey. You don’t need to go to a very expensive, very famous one; but go to get some good basic training in a culinary school.

Then after that, go see a chef and say, “I just want to learn. I want to work for you. You’re the best in the business in your town.” It can be in New York.  It can also be in Chicago or anywhere else. Just say, “I want to learn. I want to work for you.”

Halloween in Hollywood: Halsey and Catherine O’Hara Share the Spotlight in ‘Nightmare Before Christmas’ at Hollywood Bowl

Halloween in Hollywood: Halsey and Catherine O’Hara to Alternate as Sally in ‘Nightmare Before Christmas’ at Hollywood Bowl.

Halsey joined the production of “The Nightmare Before Christmas” coming to the Hollywood Bowl for just three nights prior to Halloween, as the role of Sally on the first two nights of the engagement, then the movie’s original voice actor, Catherine O’Hara takes it over on the third.

The dates Halsey will appear are Oct. 27-28.

On Oct. 29, O’Hara will not only play Sally but also step into the role of Shock, which will be sung on the previous two nights by Riki Lindhome.

Although it’s a short part in the live-to-picture production, Sally has been a plum one for pop stars in recent years. Phoebe Bridgers did it last December in London for a two-night “Nightmare” concert engagement at London’s OVO Arena Wembley. The last time a concert engagement of “Nightmare” happened in Los Angeles, two years ago at Banc of California Stadium, Billie Eilish was in the cast to sing “Sally’s Song” for that two-night stand.

Other performers have been announced.

Fred Armisen will singi the role of Lock. Ken Page returns as Oogie Boogie.

Of course Danny Elfman will reprise the starring role of Jack Skellington, as he has done at the Bowl for many years.

“The Nightmare Before Christmas” has been presented at the Bowl in 2015, 2016 and 2018. The Banc of America show in 2021 included Paul Reubens in one of his final live appearances.

This concert version is produced by Laura Engel and Richard Kraft of Kraft-Engel Productions and Alison Ahart Williams, Tim Fox & Georgina Ryder of AMP Worldwide in association with Disney Concerts.

John Mauceri will return as the conductor of a full orchestra playing Elfman’s score live-to-film. Also returning is Sandy Cameron as guest violinist for the “Skeleton Trio Entr’acte.” Randy Crenshaw, Angie Jarée, Baraka May, Greg Proops and Fletcher Sheridan will complete the live voice cast.

Glamour is the art of creating mystery and allure,

and the new “Glamonatrix” show speaks to unapologetic sensual power with a fun fetishistic twist.”

says Von Teese.

She continues, “I feel so fortunate that burlesque has come to symbolize a celebration of beauty and sensuality in many forms, a place where diversified icons take the stage and inspire others. I’m proud to be a part of the modern burlesque movement and I’m grateful to have the chance to tour with performers who change people’s minds about striptease.”

Vidiots Foundation Set June 1 Re-Opening at Historic Eagle Theater in Los Angeles

Vidiots Foundation Set June 1 Re-Opening at Historic Eagle Theater in Los Angeles.

Vidiots, the beloved Los Angeles video store and non-profit film organization, has completed renovations on its new home, the historic Eagle Theatre in L.A.’s beautiful Eagle Rock neighborhood, and will open June 1, 2023.

Sneak preview events for Vidiots’ “Founding Members” and supporters will be held in May.

“We’re overjoyed

to finally see our dream of bringing Vidiots back to Los Angeles,”

said Vidiots founders Patty Polinger and Cathy Tauber

“We could not have accomplished this incredible feat without the loyal and steadfast support of a community truly devoted to cinema and creating a space for new generations to be inspired and enlightened by the arts, and where they can fall in love with film as we have.”

Bringing the much-loved community movie house back to its original purpose, and restoring public access to its treasured 50,000-title physical media library, Vidiots’ new home, located at 4884 Eagle Rock Boulevard, will include a 271-seat, state-of-the-art movie theater (35mm, 16mm, and digital projection), a beer and wine bar with concessions and a light menu, a flexible micro-cinema and community space, and of course, the legendary video store.

The almost-11,000 square-foot venue will provide flexibility for various screenings, special events, workshops, and community gatherings.

Vidiots will operate seven-days-a week, producing a full calendar of affordable repertory titles, new independents, hard-to-find gems, beloved classics, special events with partners, all-ages programming, and year-round education and preservation initiatives reflective of its mission.

Community and programming partnerships are being planned with A Bunch of Savages, Bob Baker Marionette Theater, IFC Films and Shudder, KCRW, Lionsgate, Monkeypaw Productions, MUBI, Outfest, rePROFilm, UCLA Film & Television Archive, and Women in Film, among many others. Vidiots’ line-up of opening months’ screenings and events will be shared in the coming weeks.

“There are not enough words to describe our gratitude

for the incredible community that’s rallied around us for so many years,

making the dream of our reopening a reality,” said

Executive Director Maggie Mackay.

“We’re counting the seconds until we can welcome all of L.A. and beyond back to the video store and the beautiful Eagle Theatre. In our corner of Northeast L.A., film will once again thrive as the social, communal, inspiring, life-changing art form it has been for over 100 years.”

A 501(c)(3) non-profit organization since 2012, Vidiots remains hard at work to reach its capital campaign goal to open and operate the newly restored Eagle Theatre. The organization’s groundbreaking relaunch would not be possible without the support of Vidiots’ Founding Members, Corporate Sponsors, Annual Members, donors at all levels, and Vidiots’ earliest supporters Megan Ellison’s Annapurna Pictures and Dr. Leonard Lipman. Vidiots invites individual and corporate Founding Members to join the organization until Vidiots’ public opening in June. Founding Member levels start at $5,000.

Vidiots Founding Members include Miguel and Justine Arteta, Katie Aselton and Mark Duplass, Ike Barinholtz, Lake Bell, Jess Wu Calder and Keith Calder, Jen and Jay Duplass, Mary Elizabeth Ellis and Charlie Day, Jerrika Hinton, Mette-Marie Kongsved and Elijah Wood, Karina Longworth and Rian Johnson, Phil Lord and Chris Miller, Max Minghella, Nate Moore, Morgan Neville, Ify Nwadiwe, Patton Oswalt, Amy Pascal, Aubrey Plaza, Paul Scheer and June Diane Raphael, Noah Segan and Alison Bennett, Sharon Van Etten, Jessica Williams, and Alex Winter, among many more.

Corporate Founding Members and Sponsors include A24, Abramorama, Alamo Drafthouse, All Facts, Chifa 國偉, Cinetic Media, Criterion Collection, Facet, Final Draft, GKIDS, IFC Films and Shudder, Kindman & Co., Letterboxd, Level Forward, Lionsgate, Magnolia Pictures, Monkeypaw Productions, MUBI, Oscilloscope Laboratories, Paramount Pictures, Pascal Pictures, Pipeline Media Group, Shout! Hubbub Manufacturing, a San Francisco-based advertising agency, has assisted Vidiots with fundraising efforts and social media creative.

About Vidiots and the Eagle Theatre:

A one-of-a-kind hub for film lovers, filmmakers, and everyone curious about cinema, Vidiots is dedicated to inspiring human interaction around film through communal theatrical presentations and preserving, growing, and providing access to its diverse DVD, BluRay, and rare VHS collection, showcasing the work of emerging, master, and underrepresented artists, and producing unique and affordable film events, and vital education programs.

A brick-and-mortar film space founded by women, Vidiots was opened as an alternative video store in 1985 by L.A. natives Patty Polinger and Cathy Tauber. For 32 years, Vidiots served its devoted community via an iconic Santa Monica storefront. In the wake of rising costs, Vidiots shuttered in 2017. With the generous and unwavering support of major donor Annapurna Pictures, which went on to umbrella the organization for two years, Vidiots was able to store its collection and devise an extensive plan for sustainable relaunch.

Vidiots’ new home originally opened in May, 1929 as the Yosemite Theatre. The Yosemite operated as an independent movie house under that banner until 1940, when it became the Eagle Theatre. Aside from a short stint in the 1970s as a Pussycat Theater (California’s infamous adult cinema chain), the Eagle served audiences as a beloved neighborhood movie house until 2000, when it was repurposed as a church. Vidiots Foundation became proud stewards of the theater in September, 2019. Vidiots has remodeled and rehabilitated the Eagle as a public cinema, video store, and community space, opening June, 2023.

Vidiots Foundation is a nonprofit 501(c)(3) organization. Gifts to Vidiots are tax deductible as allowed by law. To learn more and support visit vidiotsfoundation.org. Follow @vidiots on Instagram and Twitter, and @vidiotsvideo on Facebook for updates!

LA’s best kept Sushi Secret: Yama Sushi Marketplace celebrates 40 years

Yama Sushi Marketplace, LA’s best kept secret, celebrates 40 years

This June 2024, Yama Sushi Marketplace, a rare gem in Los Angeles will celebrate 40 years of the freshest Sashimi and Sushi Angelenos have come to crave and if possible, keep a secret.

“Please don’t tell anyone about this store” whispers one customer while another admits that “It is just not right to gatekeep this any longer!”

https://www.facebook.com/yamaseafoodla

In June 1984, Kenzo Yamada and his wife Nobuko opened Yama Seafood on Las Tunas Drive in San Gabriel.

After many years working as a fish power broker in Los Angeles, Kenzo Yamada or “Yama San” decided to open up his own shop where because of his contacts, was always assured the freshest and best cuts of fish when he visited the fish market every morning.

Today, these same fish companies provide Yama Sushi Marketplace with the freshest fish from all over the world, delivered daily.

https://www.facebook.com/yamaseafoodla

The network of Japanese sushi specialists is quite impressive and Yama san knew them all, from Nobu Matsuhisa (Nobu Restaurants), Katsuya Uechi (Katsuya Sushi) and  Kazunori Nozawa (Sugarfish and Kazunori).

No doubt that Los Angeles was ground zero for Sushi in the USA

There is no doubt that Los Angeles was ground zero for Sushi in the USA, especially with the guidance of Noritoshi Kanai of Mutual Foods (Japanese Food Distributor who introduced Sushi to the American palette).

Although through the years, many larger Japanese Super Markets began to grow in Los Angeles, Yama Seafood stayed true to form, giving customers personal service to choose the freshest cuts of Salmon, Yellowtail, Blue Fin Tuna as Yama San would personally slice each serving of sashimi for the customers.

https://www.facebook.com/yamaseafoodla

Nobuko San, his wife, would run the front and cook the most delicious side dishes for customers, and customers were always given a bag of ice to keep the fish nice and cold.

One of Yama’s first employees, Enrique Moreno (“Kike San”) became Yama’s right hand man, and helped create the now famous Yama California Roll.  “We wanted something special with the correct balance of filling, texture and rice”.

https://www.facebook.com/yamaseafoodla

Last year, in 2023, the Los Angeles Times recognized Yama as having LA’s Best California Roll, and still today, customers line up at Yama for this special sushi.  It is true that customers would literally fight over the last California Rolls in the fridge as two customers famously played a tug of war with the last California Roll Sushi as it went flying into the air and spilled on to the floor.

Yama Seafood was San Gabriel’s “Best Kept Secret”

Although Yama Seafood was San Gabriel’s “Best Kept Secret,” many customers through the years heard about Yama and still to this day travel across state lines to grab the Yama Sashimi and Sushi.

Yama San was a fixture in San Gabriel as many customers had a very close and personal relationship with him as he was always very generous with his support of the community.

In May 2021, Yama San decided it was time to pass the torch, and the Kohno Family of San Marino, stepped in to take over this precious gem.

“The actual interview took 6 months”

Scott Kohno

the CEO of EJL Entertainment

Yama San wanted to make sure that he could trust the next generation to maintain the quality and vision that he firmly established in San Gabriel.

With Scott’s extensive background in retail and food throughout the USA and Asia and his family’s experience in finance, marketing and operations, the store was gradually upgraded, and an expansion plan of the new Yama in West LA (opened 2022) and a brand new Yama in K-town (September 2024) commemorates an exciting time for the Yama Sushi Marketplace brand.

Today, Yama Sushi Marketplace has been named the “Adult Disneyland” by one of Yama’s customers as it transcends just a typical market or restaurant.

From the freshest sushi prepared by sushi chefs on the hour every hour,  to the largest selection of Sake, curated by Scott’s wife, Wendy a Kikisakeshi (Sake Sommelier) Yama has something for everyone.  Unique Shoyu (soy sauce) with Matsutake mushrooms, fresh wasabi, party platters including the new Temaki Time Hand Roll Party Platter and unique gifts and kitchen goods from Japan make the shopping experience second to none.

Whether it is the monthly sushi making or sake tasting classes or the cute Japanese stationery products, Yama is a store that is truly a feast for the eyes (a customer literally walked into to the store with her eyes shielded so she would not be tempted by Yama’s Specialty Gift Table.  “I just want sushi today and cannot get distracted by these tempting Japanese gifts!” she insisted.   A West LA Father holding the hand of his 4 year old daughter commented “thank you so much for bringing this store to West LA.  My daughter and I love Yama and it is now our Friday Night Date Night!”

To commemorate Yama’s 40th milestone, Yama will feature special events during the entire month of June, including retro nostalgic dishes from 40 years ago, mystery grab bags, special 40th anniversary merchandise and the festivities will conclude with the June 29th 40th Anniversary Celebration featuring a Blue Fin Sashimi Cutting Demonstration and Japanese Taiko Drummers.

Yama Seafood LA is a Japanese sushi marketplace

Yama Seafood is a Japanese sushi marketplace with 39 years of history in the San Gabriel Valley. They specialize in offering authentic Japanese meals that customers can enjoy at home, including a variety of party platters.

Both of their stores (San Gabriel and West LA) feature a unique selection of imported Japanese products, snacks, sake and beer, carefully curated and seasonally refreshed by their dedicated team. Additionally, they cater to diverse dietary preferences with grab-and-go items like Chicken Katsu, Somen Salad, and an assortment of Vegan Sushi options under our special brands, Sushi With Attitude and Vegan Sushi With Attitude.

This combination of tradition, quality, and variety makes Yama Seafood (Sushi Marketplace) an ideal destination for anyone seeking an authentic Japanese culinary experience.
